Broiled Veggie Dippers with Chipotle Sauce

These veggie dippers are the perfect, healthy carrier for this savory, slightly sweet, with just a hint of kick chipotle sauce. The whole deal can be thrown together in less than 20 minutes and is a healthy substitute for the typical party food. Use this for a yummy movie or game day snack or make it a meal by placing the roasted veggies on a bed of greens, adding a side of legumes, and drenching the whole thing in chipotle sauce!



Serves 2-4

Ingredients:

Chipotle Sauce

½ Cup Tarazi tahini

½ Cup unsweetened plain coconut yogurt

2 Garlic cloves

¾ Teaspoon salt

¼ Teaspoon smoked paprika

¼ Teaspoon cumin

1 Tablespoon maple syrup

1 Chipotle pepper in adobo sauce + 1 teaspoon adobo sauce

Juice of 1-2 limes

¼ Cup chopped cilantro


Broiled Veggie Dippers

1 Bunch broccolini

3 Carrots, quartered lengthwise

1 Tablespoon olive oil

¼ Teaspoon salt

1 Teaspoon garlic powder



Directions:
  1. Preheat the oven to 400 degrees and prepare a baking tray with parchment paper.

  2. Toss the veggies with the oil, salt, and garlic powder and spread out in a single layer on the prepared baking tray.

  3. Bake at 400 degrees for 10 minutes, then turn the oven to broil and cook for 7-10 minutes longer, flipping after 5 minutes.

  4. While the veggies are baking, place all the chipotle sauce ingredients in a food processor except the cilantro and blend until smooth. Add in the chopped cilantro and pulse a few times.

  5. Serve immediately and enjoy!
